What size should my og:image be?

The recommended og:image size is 1200×630 pixels (1.91:1 ratio). Facebook and LinkedIn both use this. Twitter summary_large_image also uses this ratio. For WhatsApp and Telegram, 1:1 square images (512×512 minimum) work better for link previews.
